ALDI Haul: Healthy Lunches

One of the best decisions we made during the pandemic was to finally try grocery shopping at ALDI.  We’ve heard so many good things about the organic produce, snack selection, fresh meats and much more from our friends and co-workers that we had to try them ourselves. Since we started shopping there last year, our whole grocery experience has been better.

We’ve tried to really focus on making healthy lunches this past year. Like most people, we worked from home the majority of the past 18 months and found it a little difficult to prep a healthy meal in the middle of the day when it was so convenient to run downstairs and put a frozen burrito in the microwave. We were always trying to find new and different things to make, it was becoming exhausting.

We always eat lunch together if we’re both working at home!

Shopping at ALDI turned things around for us. We discovered that they carry brands that meet a lot of our wants and needs. More than 90% of the store consists of ALDI-exclusive brands and they guarantee that the quality is as good or better than name brands. Their prices are unbeatable and shopping in-store is super easy. It can be brand overload shopping in our other local stores sometimes, but there’s a more focused selection at ALDI, so we can get in and out but still be confident we’re making the right choices.

Some of our favorite ALDI-exclusive brands include:  Simply Nature, whose products are free of over 125 ingredients and include salad mixes, pantry staples and more; Earth Grown, which features vegan and vegetarian products like veggie burgers; liveGfree, a gluten-free product line; and Park Street Deli for their dips and spreads.*

We wanted to share with you what an ALDI haul looks like. Instead of just listing the groceries we bought, we’re here to share what items we bought and how we used them to make our healthy(ish) lunches for the week.

Berry Salad

Monday
Berry Salad. For this delicious summer salad we used Simply Nature Organic Spring Mix, organic blueberries and strawberries, Emporium Selection Crumbled Goat Cheese and Southern Grove Pepitas. We made a simple olive oil, honey, lemon juice and apple cider vinegar dressing. This salad was so good and would hold up in a storage container if you had to take it to work.

Lunch Charcuterie

Tuesday
Lunch Charcuterie. We love a quick meat and cheese option for lunch. We picked out two meats fresh from ALDI: Lunch Mate Deli Selected Oven Roasted Turkey Breast and Deli Sliced Genoa Salami. We also got Emporium selection Deli Sliced Chipotle Cheddar Cheese. To keep things healthier, we cut out the carbs and added mandarins and grapes. Ben had to actually go into the office this day so he took his lunch to go in one of our storage containers. We also enjoyed PurAqua Belle Vie lime sparkling water with our lunch.

Breakfast Wraps

Wednesday
Breakfast for Lunch WrapsEveryone loves breakfast for dinner, but we’re big fans of breakfast for lunch. We made gluten and meat free breakfast wraps. We used the liveGfree Gluten Free Spinach Wraps, Simply Nature Organic Cage Free Eggs, Earth Grown Vegan Mozzarella Style Shreds and Earth Grown Veggie Breakfast Links. Ben used the Park Street Deli Mexicali Dip and Julia used the Park Street Deli Salsa. As our side we had a fruit salad with mandarins, grapes and blueberries.

Dumplings & Tofu

Thursday
Dumplings & Tofu. You guys all know how much we love Asian food. We were so excited to find these Earth Grown Tofu and Vegetable Dumplings and Earth Grown BBQ Tofu Cubes. They’re both vegan and it can be hard to find easy vegan food options. We air fried the dumplings and sautéed the tofu. We served the tofu on top of glass noodles, cucumbers and carrots.

Chips & Dips

Friday
Chips & Dips. Admittedly, Friday is sometimes our “cheat day” for lunch. We usually feel like something quick and easy and the dips we found at ALDI made the perfect quick and tasty lunch. We had the Park Street Deli Medium Fresh Cut Salsa, homestyle guacamole and Park Street Deli Mexicali Dip. The Simply Nature Organic Blue Corn Tortilla Chips were light and tasty and paired perfectly with all the dips.

We know meal planning and cooking can become mundane, but it doesn’t have to be. We were able to find so many delicious and tasty meal options at ALDI which really made planning lunches for the week a breeze.
