Made with Lots of Love: Italian Chicken with Rice & Peas
There are some home-cooked meals that we could eat over and over. This is one of them. It’s super simple and to be honest, I’m not sure exactly where the recipe came from. I wrote it down (added it to my recipe log on my computer) from my mom awhile ago and can’t find the actual recipe in her book. She made it a lot, she definitely didn’t need to review the actual recipe when making it.
It’s not a super complicated meal but sometimes those are the best ones. It’s great for entertaining a large group or even just for yourself because the leftovers are also fantastic. The best part of about this meal is that you need minimal ingredients so it’s super cheap to make. Also, it’s very important to note that the key to this whole recipe is the packet of Good Seasoning Italian Dressing. This is the only Italian dressing we ever bought in our house. We always had the packets and made it in the cruet. You simply cannot use another Italian dressing for this recipe.
Italian Chicken Rice & Peas Ingredients
- Chicken thighs and breasts
- Converted white rice (we use Uncle Ben’s)
- One bag frozen peas
- One packet Good Seasoning Italian dressing
Directions
- Defrost peas
- Make one bottle of dressing
- Bake chicken in Italian dressing at 350 for 30-40 mins
- Cook rice according to directions, use dressing instead of water. Make another dressing if you have to.
- After the rice is cooked, add peas to the rice, mix well.
- After chicken is cooked, remove chicken from dish, add rice and pea mixture, mix well, add chicken on top of rice.
Like I said, super simple, but SO GOOD!
